Göreme sits in a valley of soft volcanic tuff that two extinct stratovolcanoes, Erciyes Dağı and Hasan Dağı, deposited across central Anatolia roughly three million years ago, and the landscape still looks like the aftermath of something planetary. Wind and rain have carved the pale rock into columns locals call peribacaları, fairy chimneys, some thirty metres tall and capped with darker basalt that sheltered the softer stone beneath. Early Christians cut entire monasteries into these formations; the Göreme Open-Air Museum, a UNESCO World Heritage site since 1985, preserves Byzantine frescoes painted directly onto cave walls in pigments that have barely faded in a thousand years. The town itself is small, roughly two thousand residents, and it feels that way once you step off the main road where the carpet shops and pottery vendors cluster. Most accommodation is carved into the hillside: you sleep in rooms chiselled from the same tuff the churches were cut from, and in winter the stone holds the cold long into morning. Before dawn on clear days, dozens of hot-air balloons rise from the valley floor, a spectacle visible from every rooftop terrace, though pilots cancel without hesitation when the wind picks up. Beyond Göreme the landscape keeps shifting. Uçhisar, three kilometres west, is built around a volcanic-rock citadel that marks the highest point in the area. Avanos, across the Kızılırmak, has produced red-clay pottery for centuries using sediment from the riverbed. The valleys between settlements carry names hikers learn quickly: Rose Valley for its pink-tinted stone, Pigeon Valley for the carved dovecotes that Ottoman-era farmers used to collect fertiliser. Cappadocia also produces wine, a fact that surprises most visitors, with vineyards around Ürgüp growing Emir and Kalecik Karası grapes above a thousand metres. Evening settles early, and by nine the valley is dark and quiet.
