What are the best day trips from Amsterdam?

Haarlem is 20 km west and the Sprinter from Amsterdam Centraal gets you there in 15 minutes: trains run every 10 minutes or so, roughly €4.70 each way with an OV-chipkaart. The Grote Markt is where you start: the Grote Kerk organ has 5,068 pipes and both Handel and Mozart played it, which tends to satisfy the history half of the couple while the other one gets a coffee on the square. Walk south to Jopenkerk, a brewery inside a converted church where copper kettles sit where the altar used to be. The beer is good. The irony is better. For lunch, the restaurants lining the Spaarne river do canal-side sharing boards at half the price of anything comparable back on Utrechtsestraat. The Frans Hals Museum is small enough that neither of you gets museum fatigue: you're in, you've seen the Regents paintings, you're out in 90 minutes, and you still have the afternoon for Barteljorisstraat shopping or the beach at Bloemendaal, 6 km west by bus.

Utrecht sits 50 km southeast, 27 minutes on an Intercity, roughly €8.90 each way. The Oudegracht: a sunken canal with medieval wharf cellars turned into restaurants at water level: is likely the most romantic lunch setting within day-trip range of Amsterdam. You're eating below street grade with the water at elbow height and afternoon light filtering sideways through the bridge arches. The Dom Tower climb is 465 steps and costs around €12; worth it if one of you wants the view and the other wants the story of telling people back home. Delft is an hour by Intercity, roughly €14 each way, and the Vermeer connection is real but thin: the Vermeer Centrum runs mostly on reproductions, not originals. What Delft gives you is quiet. The canals are narrower than Amsterdam's, the crowds thin out noticeably, and the old brown cafés along Oude Delft have the kind of warm-wood-and-low-ceiling feel that makes two hours disappear over coffee and apple cake.

Zaanse Schans is 15 km north by Bus 391 from Centraal Station, about 40 minutes, and entry to the village itself is free. Mind you, it gets crowded. By 11am the main path between the cheese shop and the first windmill narrows to single-file shuffling. Go before 9:30 and you'll have the mills mostly to yourselves; the morning mist still hanging over the Zaan river, the smell of raw wood cutting through the cold air inside the sawmill. It's a 3-hour visit at most, which leaves the afternoon open. Muiden is 15 km east and the Muiderslot is a proper medieval castle with a moat and working drawbridge. The castle interior takes about an hour, but the real draw for couples is the walk along the Vecht river afterward: flat paths, green fields, nobody around, and you can rent a rowing boat from the harbour for around €15 an hour if the weather cooperates.

A few honest calls on what not to attempt in a single day. Bruges is 250 km and even the fastest train runs close to 3 hours each way: that's 6 hours of rail for maybe 5 hours of walking. It needs an overnight. Kinderdijk has 19 windmills and they're worth seeing, but getting there means a train to Rotterdam Centraal plus a waterbus from Erasmusbrug, and you're spending 2 hours each direction for a site that's a 90-minute walk along one dyke. If one of you wants green space and the other wants something to read about later, Leiden might split the difference: 40 km southwest, 35 minutes by Sprinter, with the Hortus Botanicus (founded in 1590, one of the oldest botanical gardens in Europe) and the Rijksmuseum van Oudheden both under the same comfortable day-trip clock.
