Jaipur's cafe scene runs on two clocks. There is the old clock, set by the chai stalls along Mirza Ismail Road that open at 06:00 and pour kulhad tea to auto drivers and shopkeepers before the pink walls warm up. There is the newer clock, set by third-wave roasters and mocktail rooms in C Scheme and along Ajmer Road, where doors do not open until 09:00 or noon and the crowd is on laptops or dates. The 12 cafes below hold both, in rank order. Skip the mall-food-court coffee counters and the identikit rooftop lounges chasing the fort view; the addresses here earn their slot. Expect Rajasthani breakfast plates at 09:00, sandwich boards and single-origin pours by 08:00, and a bun-samosa-and-chai ritual on M.I. Road that predates the espresso machine by half a century. Bring cash for the chai counters, a card for the roasters, and an appetite that survives Jaipur's habit of feeding you a full meal when you asked for coffee.
