Las Vegas does not have a cafe culture in the European sense and does not pretend to. Coffee here is a working drink: for shift workers coming off the Strip at sunrise, for residents pulling laptops out in the morning, for the people whose jobs run nights and whose mornings start whenever they end. The places on this list reflect that. Some are independent roasters running a quiet, serious shop; some are well-judged chains that open earlier and close later than anything boutique can manage; one is a working-day diner that only serves breakfast and does it well enough not to need a lunch menu.
