Amman eats in layers. The old downtown around Rainbow Street and the slope of Jabal Amman still runs on charcoal grills, mezze plates and the long lunch; the newer belts out toward Zahran and Sweifieh add wood-fired pizza, burger counters and Lebanese kitchens working the same block. The twelve places below sit inside a tight radius of roughly latitude 31.94 to 31.97, longitude 35.87 to 35.93, close enough that a visitor with a week can eat through most of them on foot and by short taxi. Each one is mapped on OpenStreetMap, so the address and the coordinates are checkable before you leave the hotel. The list is a mix on purpose: a Wadi-view cafe attached to a nature reserve, two named-family Lebanese houses, a handful of regional and Jordanian rooms, a wood-oven pizza counter, and one American burger address that earns its slot on the strength of where it stands, not what it serves. Skip the mall food courts; the cooking that tells you something about the city is on these streets.
