Copenhagen's restaurant scene has two faces, and they rarely meet. One is the export-grade tasting room: fermentation labs, foraging counters, prix-fixe menus pitched at the international gastronome. The other is the everyday Copenhagen: lunch counters that close before the afternoon school run, brewery rooms feeding theme-park weekends, immigrant kitchens that have outlasted three rounds of neighbourhood rebranding, and small bistros with a handwritten chalkboard and a phone that still works. This list belongs to the second city. Twelve rooms, in rank order, where the cooking is the point and the room knows it. The cuisines are deliberately mixed, because Copenhagen residents do not eat Danish food seven nights a week, and pretending they do is a tourist mistake. Watch the hours: many of these kitchens close between lunch and dinner, and the difference between a great meal and a closed door is often a matter of arriving at 15:30 instead of 14:45.
